Happy Birthday Beckett!

Today is my sweet nephew's 2nd birthday! I can't believe he is 2!!! It is always so much fun to be around him because he is such a happy little boy and loves to play!
Here is a pic of a sweet baby Beckett at about a week old with me, his Aunt Lauren and then here is another picture of a big boy Beckett and his wonderful mommy when they visited the ranch a few months ago. We had a long day of wedding planning and then some fun with the horses and cows! Beckett got to ride a horse and even ride in the back of the John Deere Gator! It was such a fun day!
It is so much fun watching him grow and being a part of his life. It will be so interesting to see how he changes throughout the next year and years to come!

What's for dinner?
So, I have never been what you would call a great cook. To me a great cook is the one who can whip up a 6 course meal at the drop of a hat and can make the most exquisite and beautiful dessert on a whim. Over the last few years, I have collected random cookbooks and read through them all repeatedly and very intimidated each time. It's not that I don't cook, I have about 5 dinners that I can make and if I do say so myself they are quite tasty, (But one can only eat chicken enchiladas or chicken and rice every once in awhile).
While I was in school, Chad actually did most of the cooking. He is a fantastic cook. I like to refer to him as the "grill master". I'm totally serious when I say that he knows his way around the kitchen better than I do! However, I've decided it's totally my turn!
Throughout our first month as a married couple, I set a goal for myself to eat dinner at home as a family (of course the cat is included) at least 4 nights a week. This might sound like nothing challenging to some people but for us that is major! That only gives us 1 night to go eat out because on average Chad is at EMS 2 nights a week....so that leaves 4 nights for dinner at home.
In the beginning of this little experiment, it was a joint effort between Chad and I for dinner. It was nice because we would grill out every night. I would come up with some sort of veggie or side dish. However, grill pork chops or chicken got real old, real quick. So, I decided to dig out the cookbooks! Yay! Chad was very unimpressed with the idea and my enthusiasm as well.
So in the past month, I have attempted 8 new recipes. It has been an experience to say the least but honestly, I haven't made a single bad dinner! I'm pretty stoked about my new adventures in the kitchen and along the way I will post some of the wonderful recipes I've come across. And even with all the protesting coming from my sweet hubby, He will even admit that he has liked all of my experiments. Yay, success!

Could we BE any busier?!
So, the last few months have been insanely crazy. Like, as I think about what we've accomplished it slightly overwhelms me.....let's see....first, Chad graduated from his Paramedic program at Grayson which was super exciting! The week after that he took his exam for National Registry and PASSED. YAY! Then it was my turn to graduate from the nursing program at Kiamichi. Such a big step in both of our lives regarding our careers!
So then it was onto the WEDDING!! The week after I graduated we said "I DO!". I will post a blog later specifically about the wedding along with pics of the big day. But I do have to say it was wonderful! We felt so fortunate to have had our "perfect" day.
The past few weeks, we have been enjoying married life! Going through all of our things and preparing for a garage sale, trying new recipes (which has been fun and super adventurous for us), and just hanging out with each other!
Along with these other crazy exciting things, this past week I received my Authorization to Test to take my Boards. I had been waiting for it for almost a month! Chad brought it in from the Post Office and I called to schedule my test immediately. I was slightly stressed when they told me I could take it in 2 days!! Ok, maybe more than slightly stressed....So Thursday I drove to Hurst and took the NCLEX-PN! Talk about NERVE-WRACKING. After I completed my exam, I was told that I could review my results in 48 hours. Seriously the longest 2 days of my life! I logged in yesterday, and finally after checking every hour on the hour just hoping they would post earlier than anticipated......my results were posted! And I PASSED! I am officially a Licensed Nurse!!
It's been a crazy 2 months but Hubby and I have done so much and we are so happy to have the the craziness behind us and focus on each other (and job hunting for me)! Yay!

And so it begins...
Yay, so we finally have a blog! Just getting everything started was an ordeal but with the help of my bff, Lynnsey, it is up and running! More to come soon and pics as well!
